For the past week or so I’ve been opening the fridge door to be greeted by a packet of pre cooked beetroot. It was bought in an attempt to be healthy at lunchtimes, added to a bowl of mixed salad leaves and tossed in a mediocre dressing but the jar of peanut butter and rustic bread loaf are just too appealing. Peanut butter sarnies are my weakness. The beetroot never stood a chance. Or did it?
In a previous life I probably would have thrown the beetroot away after leaving it for so long, but not now. So this is the result of my raiding the pantry and fridge in an attempt to do the humble British beetroot some justice;
‘and the beet goes on’, a.k.a Beetroot and Apple ‘slaw
You will need:
1 White Onion
1 Large red apple
3 pre cooked beets
2 tbsp Sour Cream
1 tbsp White wine vinegar
Salt & Pepper
Finely slice the onion, apple and beetroot. Place in a mixing bowl and coat in white wine vinegar. Spoon in the Sour cream and mix, then season to taste. Voila! One simple ‘slaw perfect for lunch with a chunk of bread or as a side dish.
