Ladies, Gentlemen and grubby little chicks, I present to you Mother Hen;
and her Tea Loaf ;
You will need;
8oz Mixed Dried Fruit
8oz Self Raising Flour
4oz Caster Sugar (unrefined)
2 tsp Mixed Spice
2 Beaten Eggs (large)
Place the mixed fruit into a bowl and pour over the warm tea, enough to cover the fruit and leave to soak for a couple of hours.
Heat oven to 180°C (fan 160). Grease a loaf tin and line with parchment paper
Drain the fruit and keep the tea
Sift the flour and mixed spice together and stir in the sugar
Stir in the fruit, add the beaten eggs, then add enough tea to bring the mixture to a dropping consistency (you won’t need all the tea)
Put the mixture into the loaf tin and bake for approx 1 hour (test with a skewer and see if it comes out clean), but I would check on it after about 40 minutes
