Yes, that’s right folks, Baked Bean Bake! Some quiver in fear at the mere thought, others dive right in (not literally, obviously, that’s just daft). This is actually a legendary meal in my family, as it’s my Dads favourite thing to cook, each one crafted with pride and joy.
He’s letting you in on the legendary recipe. It’s not the prettiest of dishes, but it doesn’t need to be. It’s hearty, rustic, home cooking and here it is;
You will need;
500g Beef Mince
1 Oxo Cube
1 Tin of Baked Beans
3 Medium potatoes
Grated Cheddar Cheese
Dice the onion and sautee in pan until soft
Add the mince and cook until brown, removing any excess fat
Transfer the mince and onion mixture to a casserole dish then add the baked beans, crumble in the oxo cube and season
Cover the mix with about 3 layers of thinly sliced potatoes (unpeeled)
Put the lid on the casserole and cook in the microwave for 25-30 minutes or until the potatoes have softened
Remove lid and add grated cheese then place under the grill until the cheese is melted and golden
Serve with crusty bread and fresh salad
