High Tea; Savoury Tomato Cheesecake

Another flippin’ cheesecake?! YES! It makes so much sense. Who needs a flan or a quiche when you can have a savoury cheesecake? This is delicious hot or cold and makes a perfect savoury addition to any high tea menu. Serve alongside slices of cold meats, cheeses and bread, scones, cakes and wash down with a hot cuppa. Perfection!

You will need;

15 oat biscuits

100g unsalted butter

200g light cream cheese

150ml double cream

2 large eggs

15 cherry tomatoes

1 small white onion

1 clove of garlic

2 tbsp tomato puree

1 tsp Marmite/yeast extract

pinch of sugar

splash of balsamic vinegar

fresh basil to garnish

Preheat your oven to 150°C

Next, smash up your biscuits. Easy option is to blitz, fun option is to smash with a rolling pin. Both ways are just as effective. Then melt your butter and add to the biscuit crumbs.

Grease a springform or loose bottom tin and press the biscuit mix into the tin to form the base

In a large mixing bowl, combine the cream cheese and the eggs (one at a time) then whip your cream and fold into the cream cheese and egg mixture

Pour over the base and pop in the oven ( 150°C ) for 45 minutes or until just set

For the topping, finely chop your onion, halve your little toms and gently heat in a saucepan with the garlic, let them soften a little (don’t let them go brown) then add the puree, Marmite (or yeasty equivalent), sugar and balsamic vinegar and a splash of hot water to loosen the combo a little and reduce until the ingredients have softened and the mixture has thickened.

Leave the cheesecake to cool in the tin, then transfer and top with the tomato mixture. Add basil leaves before serving. Delicious hot or cold
