Zingy Cucumber Relish

So what with the recent moth situation and the ever advancing wedding day, this hen hasn’t had much time to concentrate on cooking. I did manage to rescue half a cucumber though (it was beginning to look very sad lurking at the bottom of the fridge) and produced a lovely little relish. It’s nothing technically amazing, but it works.

It’s a simple mix of finely diced cucumber (skin mostly removed), a good squeeze of half a lime, a handful of finely chopped mint, a generous glug of olive oil and a pinch of seasoning

It’s very zingy, fresh and summery, which was perfect for our seven days of summer last week! It’s yummy in a crusty roll with soft cheese and good ham, would work nicely with grilled chicken and cous cous and will be perfect for BBQ’s; sandwiched between a juicy burger and a good burger bun.

Simple but tasty!
