(Banana Bread) Breakfast Loaf

It’s cold, it’s dismal and if it wasn’t for the empty feeling in my tummy and the need to pee, well, I’d still be fast asleep. It’s a good job I’ve got a breakfast treat in the pantry;

Bananas, Oats, Coffee, Pecans are  all ingredients you’d associate with breakfast and a healthy one at that, but as soon as you throw them into this loaf mix that all changes. Sure, it’ll still be good for breakfast, just a little less healthy and a bit more indulgent. It’s the weekend though and you’ve worked up to it, right? This is what weekend mornings are made for.

You Will Need;

250g Ripe Bananas – peeled

70g Oats

180g Plain Flour

3 tsp Baking Powder

180g Caster Sugar

2 Free Range Eggs

50g Pecans – roughly chopped

strong coffee

The Method;

Preheat your oven to 170 C

Grease your loaf tin

Chop your bananas and blitz to form a purée

Cream together your butter and sugar then add the eggs, combining one at a time

Add the coffee. I drink instant, so used 5 heaped teaspoons dissolved in 2 tablespoons of water (nice n strong) and fold in the Banana puree

Next, add the pecans and oats and sift in the flour and baking powder then fold in to the mixture

Transfer the mixture to the loaf tin (top with some oats and whole pecans  if you wish) and bake in the middle of the oven for 1 hour. Cool in the tin for 10 minutes, then turn out on to a wire rack to continue cooling

Enjoy with a cuppa
